This week’s conversation could have covered almost any topic in beer, and could easily have been a series in itself.  Dermot O’Donnell has been brewing for more than 50 years, since starting at the Courage Brewery in 1967. He has worked in the UK for Bass Charrington, as well as locally at Lion, CUB, CCA and more recently at St Andrews Beach Brewery in a consultancy role. He was involved in developing a wide range of beers over the years including Tooheys Blue, Tooheys Dry, Carlton Mid and Pure Blonde. He also developed Subzero. While I could have done an episode on almost any one of those, I was interested in speaking to Dermot about his thoughts about the rise of seltzers. Older brewers have often said that one of the things that drove down the bitterness of mainstream beer prior to the advent of craft beers was the rise of things such as wine coolers that competed against beers and appealed to people who 'didn’t like the flavour of beer'. In this conversation we learn how a Sydney couple working in the money markets decided to move their family to the Sunshine Coast after chancing upon an ad for a failing beachside coffee shop while reading the paper in bed one Saturday morning. They took it on with little hospitality experience, no background in beer or brewing and are now the most highly awarded brewerey on the Sunshine Coast. This week we hear from Bentspoke's Richard Watkins and it's all about delicious barrel aged Flanders Reds. Beer is in a really interesting place right now. If you look at the early generation of craft brewers, many were inspired by travels through Europe, especially Belgium. Later, it was hop forward beers that inspired brewers and beer drinkers alike. Hop forward gradually morphed into hop driven beers and we saw an IBU arms race. More recently hops have meant haze and we have seen a race to be the cloudiest most fruit punchy beers on the market. Another notable trend has been the rise of what are termed sour beers, which has also seen a race to be the most mouth puckering, or wildest combination of flavours. It’s all good fun and great for headlines and for attention, and also interest in the sector. Today on The Antidote podcast we caught up with Stone & Wood Brewing General Manager Nick Boots about how Australia's largest independent craft brewery is coping with the shut downs, especially with a cross border work force. Interestingly, the head of this yeast company has spent 15 years working in the hops industry, as well as opening a Belgian craft brewery. In this chat, we find out where yeast is headed as a feature flavour.
